Lazy Morning Eggs Florentine
Okay, so even though I posted yesterday about being psyched for school to start, I must add this disclaimer: I still love my relaxing mornings every once in a while.
This morning is one of those mornings. I woke up early to make some French pressed coffee before my husband left for work, but then went back to bed to partake in one of my guilty pleasures--word searches. :) I then proceeded to fall back asleep until 8:45. :)
I'm sure just about everyone has heard of Eggs Florentine and knows how to make it, but this simple, little breakfast brought me much joy this morning. So....of course, I'm posting about it! If you've never made Eggs Florentine, it's a great, easy way to take in lots of protein before a big day (or in my case, a lazy one). Just fry up an egg any way you like it. Serve it over toast. Most people put cooked spinach leaves atop the toast and top the leaves with the egg, but I like to serve fresh spinach leaves on top of the egg instead. Grate a little Swiss cheese on top of everything. I recommend serving with French pressed coffee.
So perfect. :)
