Last night was a special kind of crazy.
We had grandiose plans of taking full advantage of the gorgeous weather and grilling out on our patio. However...in the midst of the toddler running around and me cleaning up after her and my hubby dutifully slicing veggies, we landed up in the ER before dinner was even underway.
To make a long story short, everyone is fine and kitchen knives are not Hubby's friend.
An hour later we were safely back home and Hubby was banned from kitchen duty. :) Don't get me wrong, he is a fantastic cook, but slicing veggies was no longer an option for him.
So I took over what I had started earlier, an asparagus side. This is hands down my favorite way to cook asparagus. They turn out slightly crispy, buttery and perfectly seasoned. Plus, they only take twenty minutes!

Easy Baked Parmesan Asparagus
We had zucchini on the side too. :) |
Ingredients:
half a package of asparagus
2 Tbsp. melted margarine or butter
2 1/2 Tbsp. parmesan cheese
salt and pepper to taste
Instructions:
Line a baking tray with tin foil. Grease with extra melted margarine or cooking spray.
Lay asparagus across the baking tray.
Pour melted butter or margarine over the top of all the asparagus.
Sprinkle with salt, pepper and cheese.
Bake at 400 degrees F for twenty minutes.

Served with baked zucchini and crumbly burgers. Delish! |
