Honey Mustard, Brown Sugar, and {Turkey} Bacon-Wrapped Baked Chicken






In the last few months this has become a favorite of mine.

In looking through cookbooks and food magazines this summer, I combined several ideas and came up with this recipe. I know it's a lonnnnnnng name, but I love it because it is what it sounds like: honey mustard, brown sugar, turkey bacon, and chicken. That's it!

Honey Mustard, Brown Sugar, and {Turkey} Bacon-Wrapped Chicken

Ingredients:

4 boneless skinless chicken tenderloins, thawed
1/4 c. brown sugar
1/4 c. honey mustard (or just mix 1/8 c. of regular mustard and an 1/8 c. of regular honey!)
4 slices of turkey bacon
salt and pepper to taste

Instructions:

Preheat oven to 350 degrees F.

Grease or spray a 8 X 8 in. baking dish.

Place chicken in dish and sprinkle generously with salt and pepper. Then carefully wrap each tenderloin with one slice of turkey bacon. Place back in dish.

Divide brown sugar evenly into fourths (I always eyeball this, but it would be 1 Tbsp. per tenderloin if you want a measurement). Press brown sugar onto each bacon-wrapped tenderloin. If brown sugar falls off into dish, no worries! It will just add to the delicious juices they cook in!

Drizzle the bacon-wrapped, brown sugared chicken with the honey mustard and sprinkle again with salt and pepper.

Bake for 30 minutes or until juices run clear.

I love serving this with steamed green beans or my parmesan asparagus. The leftovers even became a salad!!
