Whole Wheat Apple Cinnamon Muffins


These apple cinnamon muffins are hearty, sweet, and perfect for lazy, Sunday mornings.

My husband and I made these late on Saturday evening so we could enjoy sleeping in a little before church yesterday. :) I wasn't sure about the whole wheat flour thing at first, but the muffins turned out so delicious and moist, that I just might try several other recipes with whole wheat flour!

Ingredients:


1 1/2 cups whole wheat flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 cup shortening {I used margarine}
1 egg
1/2 cup milk
1/2 tsp. cinnamon
1 cup diced apples {I used Gala}

*Mix 1/3 cup brown sugar and 1/3 cup quick oats for a fast, easy crumb topping*

Method: 

Preheat oven to 350 degrees F. Blend all ingredients together with an electric hand mixer on a medium setting until ingredients are just mixed. Pour into 12 well-greased muffin cups and add crumb topping if desired. Bake for 20 minutes. Allow to cool for at least thirty minutes. Store in an airtight container.


We zapped these in the microwave the next morning for about thirty seconds and served with freshly brewed coffee. Couldn't think of a better way to start my Sunday!
