so recently, I've been researching tons of gluten free cooking and baking ideas, and found this on Pinterest.
What a good idea!
I wanted to make an actual loaf of bread, and only have cornmeal on hand (no gluten free cup for cup flour mixes in this girl's pantry!) So instead I used the recipe from up top and mixed it up a little to create a whole loaf using only cornmeal as my "flour base."
It's a little mealy, of course, but has a light texture and holds it's shape well! I'm impressed with how little it actually tastes like cornbread!

Gluten Free Cornmeal Based Bread Loaf
Ingredients:
1 1/2 c. cornmeal
1/2 c. milk
1 Tbsp. white distilled vinegar
*or 3/4 c. buttermilk instead of the milk and vinegar
1 Tbsp. baking powder
1 Tbsp. water
2 eggs
2 Tbsp. sugar
1/2 tsp. salt
Preheat oven to 350 degrees F. Grease a regular loaf pan.
Combine all ingredients in a large bowl and mix well. Pour into pan and bake for 20 minutes. Loaf will rise a little and be golden on top.
