Ultimate Baked Potato Nachos

Just a recipe today. :) Gluten free, but a little decadent. Many thanks to my Hubby for the idea!!





Ingredients: 

10-12 small gold potatoes
1/2 c. plain yogurt
3 Tbsp. Ranch dressing
1 c. shredded cheddar cheese, divided
6 slices deli style turkey
1/4 c. packed baby spinach leaves
salt and pepper to taste

Instructions:

Line one large baking sheet with tin foil and grease generously with baking spray.

Preheat oven to 350 degrees F.

Wash, peel and thinly slice the potatoes. Place half the potato slices evenly around a large microwavable plate. Microwave on high for about seven minutes, or use potato setting for two potatoes. Remove plate from microwave, and repeat for the remaining half of potato slices.

While potatoes are baking, combine the yogurt and ranch dressing. Set aside.

Thinly slice the deli turkey. Set aside.

Evenly spread the potatoes across the baking sheet. Spray again with cooking spray, and sprinkle generously with freshly ground salt and pepper! (my favorite part. . . yum!)

Sprinkle with 1/2 c. of the cheddar cheese, the turkey pieces, and the baby spinach leaves.

Bake in the oven for 20 minutes.

Remove from oven and spread the ranch/yogurt mixture evenly across the cheesy potatoes. Finally, sprinkle the remaining 1/2 c. of cheese evenly over the potatoes.



Dive in and enjoy!! <3
